Smothered Chicken Casserole – Healthy and Fit

Enjoy this creamy chicken casserole baked with chicken thighs, broccoli and angel hair pasta. The bacon sprinkled on top adds to the “yum” factor!


1 tablespoon oil
4 boneless skinless chicken thighs
1/2 teaspoon garlic salt
1/4 teaspoon pepper
6 oz uncooked angel hair pasta
1 can (10 3/4 oz) condensed cream of chicken soup
1 1/4 cups half-and-half
1/2 teaspoon smoked paprika
2 cups Green Giant™ Steamers™ frozen broccoli florets, cut into smaller pieces
3 slices precooked bacon, crumbled


  • 1 Heat oven to 350°F. Spray 2 1/2-quart casserole with cooking spray. In 10-inch skillet, heat oil over medium-high heat. Add chicken thighs; sprinkle with garlic salt and pepper. Cook chicken 8 to 10 minutes, turning once, until golden brown and juice of chicken is clear when thickest part is cut (at least 165°F).
  • 2 Cook pasta as directed on package; drain. In large bowl, mix soup, half-and-half and paprika; reserve 3/4 cup sauce. Stir in cooked pasta and frozen broccoli.
  • 3 Place pasta mixture in casserole; top with chicken thighs. Spoon reserved sauce over chicken thighs. Top with bacon. Cover and bake 20 minutes; uncover and bake 10 to 15 minutes or until sauce bubbles.

Coconut Cake Recipe – Healthy and Fit

This fabulously delicious cake clocks in at just 5 Weight Watcher Points + per slice, and is a very filling and satisfying dessert. It turned out so moist and creamy, and I absolutely fell in LOVE with this cake.

– 1 box cake mix – white preferably, but yellow is okay
– 1 can (12 oz.) Diet Sprite or Sprite Zero
– 1 cup fat free sour cream
– 1 cup shredded coconut
– 1 cup Splenda (granular)
– 1 1/2 cups Cool Whip Free

It is best to begin to prepare this cake a few days before it is needed in order to allow time to refrigerate it between steps and before serving. Preheat oven to temperature specified on cake mix (350° or 375° depending no brand.) Grease & flour two round cake pans, or spray with Baker’s Secret or Pam for Baking. Mix cake mix and Sprite. (Do not add the other ingredients called for on the cake mix box.) You can add a teaspoon of coconut extract/flavoring if you have it on hand, but it is not necessary.

Pour into 2 prepared cake pans. Bake according to time on box (approx. 30 minutes) until lightly golden brown. While the cake bakes, prepare the filling. Mix 1 cup fat free sour cream and 1 cup Splenda with 1 cup coconut. Reserve a couple of tablespoons of coconut for garnish if you wish. Refrigerate the filling mixture. Cool the cake layers to room temperature and then refrigerate overnight if possible.

To construct the cake: Slice each layer in half horizontally to make 4 thin layers. Beat the filling mixture by hand to fluff a little and make less stiff. Place first layer on cake plate and top with approx. 1/4th of the filling mixture. Repeat this with each layer, so that you have 4 layers of cake with 3 layers of filling in between. Add the Cool Whip Free to the remaining 1/4th of the filling mixture. Mix by hand to make a fluffy frosting for the cake. Frost the top and sides of the cake with the mixture. Sprinkle the reserved coconut decoratively on the top of the cake. Refrigerate several hours or overnight if possible. Cut into 16 slices … this is a very rich dessert and a small piece is very satisfying. Store any left over cake in the refrigerator.

Heating the chicken for four hours brings a remarkable texture to the meat in this slow cooker chicken recipe.


4 skinless chicken thighs, skin removed if purchased with skin on, bone-in or boneless fine
1/2 teaspoon salt
1/4 teaspoon pepper, divided
2 tablespoons olive oil
2 tablespoons toasted sesame seeds, divided
1/2 cup light (lower sodium) soy sauce, optional Tamari
1/4 cup raw honey
1 tablespoon lemon juice
2 cloves garlic, finely chopped
1 teaspoon cornstarch


Rub the chicken with the salt and half of the pepper. Over medium to high heat in a skillet with olive oil, brown both sides of the chicken. Transfer the chicken to the slow cooker then sprinkle with1 tablespoon of sesame seeds.

In a small bowl, whisk the soy sauce, honey, lemon juice, garlic, and the remaining pepper.

Pour the soy sauce mixture over chicken. Cook on low 6 hours or high for 4 hours. Chicken is done when it reaches an internal temperature of 165 degrees.

Separate the chicken from the liquid then pour the liquid in a small saucepan. Over low heat, cook the liquid with the cornstarch until it thickens. Pour the sauce on the chicken before serving then sprinkle the remaining sesame seeds.

This chicken dish goes perfectly over a bed of steamed brown rice or quinoa.

Oatmeal Cranberry-Walnut Cookies

I made a few changes to a recipe on the back of a canister of oats. Now this is the only one I use. I often use hazelnuts in place of the pecans, and they are just as good. I hope you enjoy them as much as we do. You can make these larger or smaller; simply adjust the baking time. Keep loosely covered, and they will maintain their chewiness for several days, if they last that long.


2 cups flour, (I used White Whole Wheat King Arthur Brand…unrefined flour)
1 teaspoon baking soda
1/2 teaspoon Kosher or sea salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups old-fashioned rolled oats
1 cup unrefined coconut oil melted, (optional 1 cup unsalted real butter at room temperature)
1 cup coconut palm sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups dried cranberries
1/2 cup diced walnuts


Preheat oven to 325 degrees.

Tip: When measuring flour, spoon into measuring cup and level off being careful not to pack flour. It’s important not to scoop flour from bag as this will pack flour and make a heavier cookie.

Whisk together flour, baking soda, salt, cinnamon and nutmeg. Add oats and stir to combine.

In a large mixing bowl, using an electric mixer, beat coconut oil and coconut palm sugar until incorporated, about 4 minutes. Add vanilla and eggs and mix on low speed until well combined. Add oat mixture a little at a time just until combined. Stir in cranberries and walnuts.

Roll dough into small balls and place onto a parchment lined cookie sheet or non-strick cookie sheet and place about 2″ apart. You should get 40 balls altogether. Press cookies down slightly, place on the center oven rack. Bake cookies 7 minutes, rotate pan and bake an additional 7 minutes, or just until set. Cookies should be still slightly soft in the center as they will continue baking when removed from the oven. Allow cookies to cool two minutes before transferring to a cooling rack.

Allow cookies to cool completely, store in an airtight container for up to 3 days. For best results, do not refrigerate.
