3. Bye bye frizz, hello volume: Mix equal parts hair conditioner and Epsom salt together. Heat the mixture in a pan. Then starting at the roots and working your way down, massage the mixture into your hair. Let set for 20 minutes and rinse. This works great for getting rid of frizz and adding volume to your hair.
4. Wash your face: Mix Epsom salt with liquid soap or face cream. Rub gently into your skin and rinse. You’ll get a moisture boost and remove dead skin cells.
5. Deflake the lips: Mix a bit of Epsom salt with petroleum jelly and massage it into your lips to remove dead skin cells.
6. Ease a headache: If you have an aching head after a rough day at the office (or with the kids), try soaking in an Epsom salt bath. The salt-soaked bath can help relieve tension in your muscles and ease your headache.

Slow Cooker Creamy Italian Chicken

OMG… this is AMAZING! It is so easy and full of flavor! This will be going into the rotation!

Number of Servings: 6

Ingredients
2 pounds boneless, skinless chicken breasts
1 packet Italian dressing mix
1/2 cup water
1 (8-ounce) package reduced-fat cream cheese
1 can 98% fat free cream of chicken soup
3 cups cooked long grain rice (white or brown)

Directions
1. Place chicken in crock pot
2. Mix together Italian dressing mix and water. Pour over chicken.
3. Cover and cook on high for 4 hours OR low for 8 hours.
4. Mix together cream cheese and soup in separate bowl.
5. Carefully remove chicken from crock pot to plate.
6. Pour cream cheese/soup mixture into crock pot and mix together with dressing in bottom.
7. Return chicken to crock pot and mix gently to shred the chicken.
8. Cook on LOW until heated through.
Serve with rice or noodles.

**You may add skim or low fat milk in very small quantities to thin the sauce a little. It does not significantly affect the nutritional value if you use up to 2 tablespoons**

Makes 6 servings. Approximately 2/3 cup mixture with 1/2 cup rice.

This recipe can be made with FAT FREE cream cheese and it saves about 6 grams of fat. However, I feel that the dish benefits from the flavor of the low fat over the fat free.

This is a featured recipe taken from The Biggest Loser Quick and Easy Cookbook by Chef Devin Alexander.

Ingredients:

1/2 pound sweet potatoes, cut into 1/4″ thick sticks
1 Tbs. grated reduced-fat Parmesan cheese
1/2 tsp. extra-virgin olive oil
1/8 tsp. garlic powder
1/8 tsp. paprika
Pinch of cayenne
Salt to taste
Pinch of ground black pepper
Ketchup (optional)

Instructions:

1. Preheat oven to 450 degrees F
2. In a medium bowl, toss the potatoes, cheese, olive oil and spices
3. Place potatoes in a single layer on a medium nonstick baking sheet
4. Bake for 8 minutes
5. Flip the potatoes and bake for 10-12 minutes, or until the potatoes are tender and browned
in spots.
6. Serve immediately

Skinny Shrimp Scampi over Low Carb Zoodles

Quick and easy shrimp scampi, sautéed in a light and delicate, garlic butter sauce: It’s so good!

Ingredients

2 large zucchini, cut into noodles (3 cups of zoodles) see prep tip below

2 tablespoons reduced-fat butter or Smart Balance Light

2 teaspoons garlic, minced fine

⅛ teaspoon crushed red pepper flakes (optional)

12 large shrimp, shelled and deveined (about ½ pound)

2½ tablespoons white wine or chicken broth

1½ tablespoons freshly lemon juice

2 teaspoons Parmesan cheese, grated

Directions

1. Prepare the zoodles, see prep tip below. Place zoodles in a microwave-safe bowl and cook in microwave for about 2 minutes, until softened.

2. In the meantime, in a large nonstick pan, heat butter over medium-low heat. Add garlic and crushed red pepper flakes and cook for 1 minute, stirring constantly.

3. Add shrimp to pan and cook, stirring often, until they are cooked throughout and pink on all sides, about 2 minutes. Season shrimp with a little salt and pepper. Using a slotted spoon, transfer them to a bowl, leaving any liquid in the pan.

4. Increase heat to medium. To the same pan, add white wine and lemon juice. Using a wooden spoon or rubber spatula, scrape any brown bits from the bottom of the pan, cooking the wine and lemon juice for 2 minutes. Add the softened zucchini noodles and cooked shrimp. Toss to combine and heat about 30 seconds.

5. Divide the zoodles among 2 plates and spread out over plate. Top each with 6 shrimp. Sprinkle each serving with 1 teaspoon Parmesan cheese.
Serve immediately.

Makes 2 servings. Each serving 6 shrimp and ½ the zoodles.

Cheesy Chicken and Rice Casserole

This one-dish wonder features moist, tender chicken breasts covered with melted Cheddar cheese, sitting on a bed of creamy rice and vegetables – it just doesn’t get any better!

Ingredients

  • 1 cup brown rice, uncooked
  • 1 lb cooked skinless boneless chicken breasts, diced
  • 2 cups fat free chicken broth
  • 1-2 cubes chicken bouillon
  • 16 oz frozen broccoli
  • 8 oz frozen mixed vegetables
  • 1 cup reduced fat cheddar cheese, shredded
  • 1 ½ cups fat free sour cream
  • 1 cup fat free milk
  • 2 tbsp whole wheat flour
  • 1 tbsp light butter (I used Brummel & Brown)
  • 2 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees. Spray a large 9” x 13” baking dish with non-fat cooking spray or an olive oil mister.
  2. Prepare rice according to package directions, but using the chicken broth instead of water, and adding in the bouillon with the broth.
  3. Bring a large pot of water to a boil on the stove. Blanche broccoli and mixed vegetables for just about 3 minutes. Drain and spread evenly into baking dish. Top with the cooked chicken. Sprinkle with salt, pepper, onion powder and paprika.
  4. Top with ½ cup of the shredded cheese. Then top with the rice.
  5. In a small saucepan, melt butter over medium high heat. Whisk in the flour and stir until well combined. Add in milk, salt and pepper, and continue to whisk constantly, until mixture bubbles and thickens. Remove from heat and fold in the sour cream. Pour over rice, and then sprinkle evenly with remaining cheese.
  6. Place in oven and bake for about for about 20 minutes, or until cheese is melted and bubbly.
  7. Let cool about 10 minutes before serving.

Entire recipe makes 8 servings
